Sweet Shells/Gavallu



Ingredients:

 All purpose flour - 2 cups
Wheat Flour - 2 cups
Semolina - 1/2 cup(optional)
Butter - 1/4 cup
Baking Soda - pinch
Salt -pinch

For Syrup :

Sugar - 3 cups
Elachi -2

Method:

  • Make a chapathi dough of  above ingredients....
  • Make small balls...press and roll with fork...
  • In pan make sugar syrup with 1 cup of water...make 2 spring consistency...
  • Deep fry these shells in medium flame....dip in sugar syrup for 2 min...

Karahi / Fry Gosht




Ingredients


Mutton - 1 kg
Onions - 2
Green Chillies - 4
Tomatoes - 1
Ginger & Garlic Paste - 1 1/2 paste
Salt - As per Taste
Red Chilli Powder - 2 spoons
Tumeric Powder - 1/2 spoon
Karahi Ghost Masala - 4 spoons
Oil - 3 spoons
Curd - 3 spoons
Coriander - Bunch


Method 


  •  In pan add Mutton n cook until water goes or add little water n then cook it in pressure cooker for 3 whistles


  • In pan add oil fry green chillies and onions until it turns golden brown color....   
  • Add mutton and tomatoes n fry until water goes  n then add  salt,tumeric,ginger garlic paste 
  • Now add curd and red chilli powder fry for 5 min....after that add karahi masala fry for another 5 min...
  • Now add coriander ......

Bombay Chips



Ingredients 

water -300 ml
maida- 1/2 kg
Butter - 10gms
salt...as per taste
vammu/ajwain - 1 spoon

For mixing after fry


Salt 
Chilli powder
Jeera powder
Coriander powder


Method


  • In pan add water when it boils add salt and butter..... and then add maida  and vammu...
  • Now take that mixture in plate n then  mix well....
  • make small balls....n press with hand....make like small chapathi...
  • fry in medium  heat until the color turns into golden brown color...now take it in plate.....
  • Add little salt,chilli powder, jeera powder,coriander powder...mix well...store in container...15 days

Chicken Drumsticks Curry






Ingredients

 

Chicken Leg Pieces - 1kg
Onions -1
Tomatoes - 1
Green Chillies - 3
Curry Leaves - bunch
Coriander - bunch
Garam Masala - 1 spoon
Salt - As per Taste
Chilli Powder - 1 1/2 spoon
Ginger & Garlic Paste - 1 1/2 spoon
Oil  - 4 Tea Spoon

To Grind Paste:

 

Coconut powder
Cashews 
Badam
Walnuts
Sesame Seeds
Poppy seeds
Peanuts

Preparation

 

  • Marinate Chicken leg pieces with salt, red chilli powder,ginge&garlic paste...let it rest for 15min
  • In pan add oil fry green chillies and chopped onions...add chicken fry for 10 min...add tomatoes and 1/4 cup of water...fry again for 5 min...
  • Now add paste of coconut and all remaining things...fry again for 5 min...
  • Switch off  stove add coriander leaves and garam masala..... 

Grind above ingredients without water and store in fridge about 6 months also...

Dry fish Rasam

I got cold...i am not interested to take medicines...this is the remedy i use when i got cold....


Ingredients 

Dry Fish - 100gms
Onion - 2 
Tomatoes - 1
Green Chilli - 4
Salt - As per taste
Red Chilli powder - 2 spoons
Tumeric Powder - 1/4 spoon
Tamarind - small lemon size
Oil - 2 spoons
Curry Leaves
Coriander leaves - bunch

Procedure


  • Cut onions , green chilles , tomatoes...
  • Soak tamarind in Hot water...
  • Mix dry fish and remaining ingredients....add all those in sauce pan with 1 litre of water except tamarind...
  • In high heat boil for 15 min
  • Add tamarind water in sauce pan...again boil for 5 min..add coriander leaves right now...
  • Now take it out..Serve with hot rice....
  • Its good in cold weather...or if u caught cold or cough...
Same process can do it with dried shrimps....

Seekh Kebab In Air Fryer


Ingredients 

Mince - 1/2kg
Onion - 1
Chiiles - 2
Ginger Paste - 1 spoon
Garlic Paste - 1/2 spoon
Salt - As per taste
Red Chilli  powder - 1 spoon
Garam Masala - 1/2 spoon
Coriander powder - 1/2 spoon
Coriander leaves - bunch
Curry leaves - bunch
Mint - Bunch


Procedure 


  • Except mince crush all the ingredients in blender or in mixer...not like paste...
  • Now add all these in mince...mix it well 
  • Leave for 15 min...
  • Make it like patties or like roll as u like it.....by touching little oil with hand....
  • Put chop sticks in cold water if u want to roll mince mixture around stick...
  • Put it in air fryer for 15 min at 180
  • Leave it for 2 min in air fryer.....
  • Take it plate....enjoy with green chutney...

Lettuce egg fry





Ingredients


Lettuce - 1
Eggs - 4
Onion - 1
Green chilli - 2
Coriander powder - 1 spoon
Salt - 1 spoon
Red Chilli powder - 1 1/2 spoon
Tumeric powder - 1/4 spoon
Oil - 2 spoons
Talimpu dinusulu - 1 spoon
Curry leaves -


For  Talimpu dinusulu:

Roasted gram 
Urad dal 
Mustard seeds 
Cumin seeds 
Methi seeds 


Mix well all these above ingredients and store in container.....


Preparation

  • Heat oil in a pan add Green chillies and onions....when onions are brown and then add talimpu dinusulu and curry leaves...
  • Now add chopped lettuce in pan....wait for 5 min...now water comes out from lettuce
  • Meanwhile boil egg
  • Add salt,tumeric and chilli powder and mix well...wait for 5 min 
  • Add boiled egg in lettuce....put lid for 5 min...
  • Add coriander powder....Now its ready...

Pepperoni Sandwich(My version)


We like spicy food.....that's y i made it spicy.....this is my version




Ingredients 


Sandwich Bread - 2 slices
Pepperoni - 10 pieces
Tomatoes - 1
Onion - 1
Lettuce - 1 leaf
Jalapeno / pickled peppers - 4
Shredded Cheese - Any
Sauce - I used peri peri mayonnaise
Chilli in oil - optional

Preparation 


  • Cut tomatoes, onion , tomatoes(today i used pickled jalapeno,if u don't have fresh tomatoes use sundried tomatoes)









  • Take bread slices add sauce on both sides on slices 



  • Now arrange lettuce,tomatoes,onions,pepperoni , jalapenos,chilli in oil ,and shredded cheese





  • Now put it in panini press..

Chicken hot wings in air fryer


Ingredients


 Chicken Wings - 1/2kg
Salt - 1 spoon
Red Chilli Powder - 1 1/2 spoon
Ginger & Garlic Powder - 1 spoon
Turmeric powder - 1/4 spoon
Oil - 1 spoon
All purpose flour/wheat flour - 1 spoon
Spice mix/Garam masala powder - 1 spoon
Soya Sauce(Optional) - 1/2 spoon
Lemon Juice - 1/2 lemon
Color (Optional) - 1 pinch

Preparation :


  • Marinate above ingredients except chicken.Mix well to thick paste
  • Now add chicken wings....let it rest for 1 hour or as much as u can....(rest for 24 hours in fridge)


  • Now put it in air fryer for 15 minutes at 200
  • After that shake little bit...again keep for 5 min...
  • Just leave for 1 min because in air fryer temperature will maintains.....so if u rest it becomes soft and crispy

Methi Chicken( fenugreek leaves chicken)


Preperation Time  20 Minutes

Content
Chicken

Ingredients:

1 kg Chicken thigh meat
red chilli powder
chopped coriander leaves -1 bunch
corainder powder
cumin seeds
curd (yogurt) -1 1/2 cup
garam masala pdr- 1/2 tsp
ginger garlic paste
green chillis - 5-6 cut into small sizes
methi leaves - 2 bunch big leaves( feenu greek leaves)
onion chopped -2 medium
tomato - 3 chopped
turmeric powder
salt as per taste

Procedure:


  • Heat oil in a pan add little cumin ,onion and cook till golden brown
  • Add turmeric , 1 tsp ginger garlic paste ,add tomatoes ,1 1/2 tsp chilli pdr,salt as per taste,1 tsp coriander pdr, and curd and cook covered till well cookedaproximatly 5-7 mins 
  • Add methi leaves and cook for 2-3 mins then add chicken and cook till the sauce is thick 
  • Add coriander leaves and 1/2 tsp garam masala pdr and cook it for 3-4 mins .
  • For garnishing add chopped corainder leaves on it .

Nargisi Kebab





Preparation Time  45 Minutes
Contents
Egg, Mutton
Ingredients

Egg – 4 nos
Boiled mince meat -  250gm
Salt - As per taste
Bengal gram dal – 1/2 cup
Chilli powder – 1 tsp
Garam masala powder  -1/2 tsp

Method
  • Soak the dal overnight, drain and grind to a paste.
  • Mix with the meat and rest of the ingredients and keep aside.
  • Hard boil the eggs, and shell them.
  • Coat the above  paste on the eggs and  smoothen neatly.
  • Deep fry in oil.
  • When completely cool,  cut lengthwise with a well greased knife.
  • This may be served as a snack or put in any gravy and served as a curry.

Another Way To Do:

 Ingredients:

Lamb meat(boneless) - 250 gms
Eggs hard boiled - 4
Chilli powder - 1/2 tsp
Curd - 1/2 cup
Ginger paste - 1/4 tsp
Garlic paste - 1/4 tsp
Turmeric powder - 1/4 tsp
Putane ki dal(powdered) - 1 tbsp
oil -  deep frying
Salt to taste

Method



  • Pressure cook meat with ginger and garlic pastes, chilli powder, turmeric powder, salt & water for 15-20 minutes, till meat becomes tender.
  • Open the cooker and cook till there is no water left.
  • Allow it to cool and grind it in a mixer adding curd in small quantities and powdered   putane ki dal, till the meat mixture becomes soft.
  • Divide the meat mixture into 4 portions to make 4 kababs.
  • Take one portion, flatten on the palm and after puttin the full-boiled egg, cover the samt to form a ball.
  • Repeat the same procedure the balls turn golden brown.
  • Cut into two pieces while serving

Spicy Mackerel Fry



Ingredients 

 Mackerel Fish – 4 medium nos washed and cleaned 
 Vinegar/Lemon juice - 1 tbsp
 Salt- 1 tsp

For marination

Ginger & garlic paste – 1 tsp 
Chilly powder – 1.5 tsp
Turmeric powder – 1/4 tsp
Lemon juice – 2 tsp
Salt to taste
Oil  – 4tsp

Method:

  • Clean the fish properly. First wash it with salt..Then with lemon juice /Vinegar . Rinse and drain completely. 
  •  Make shallow cut marks(lines) 1 inch apart of both sides of the fish
  • Wash once again and drain the water. 
  • Make a fine paste of the ingredients for mariantion(If required all 1 to 2 tsp water)
  •  Add 2 tsp  oil in marination
  •  Marinate a thin paste over and fish and inside the slits. 
  • Keep the marinated fish for half an hour in the chiller. 
  • Heat oil in a thick bottom saute pan and slide in the fish pieces one by one 
  • Shallow fry both sides of the fish on medium heat.
  • Once the fish pieces are crisp enough as you like. Remove and place it on a paper towel to drain the excess oil.....Serve Hot...
